Weekend Update

I am so sad that the weekend is over and Monday is here already! We had a great weekend relaxing & spending time with friends! As I was putting together this post I realized it was full of randomness...but a lot of fun!


I know Thursday isn't part of the weekend but I wanted to share the crab cakes I made this night with the left over crab we had from the night before. They were so easy to put together, didn't take hardly any time to cook and tasted delicious!! I chose Paula Deen's recipe because you can never go wrong with her Southern goodness and guess what, no butter in this recipe!

Ingredients

  • 1 pound crabmeat, picked free of shells
  • 1/3 cup crushed crackers (recommended: Ritz)
  • 3 green onions (green and white parts), finely chopped
  • 1/2 cup finely chopped bell pepper
  • 1/4 cup mayonnaise
  • 1 egg
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dry mustard
  • 1/2 lemon, juiced
  • 1/4 teaspoon garlic powder
  • 1 teaspoon salt
  • Dash cayenne pepper
  • Flour, for dusting
  • 1/2 cup peanut oil
  • Favorite dipping sauce, for serving

Directions

In a large bowl, mix together all ingredients, except for the flour and peanut oil. Shape into patties and dust with flour.
Heat oil in a large skillet over medium heat. When oil is hot, carefully place crab cakes, in batches, in pan and fry until browned, about 4 to 5 minutes. Carefully flip crab cakes and fry on other side until golden brown, about 4 minutes. Serve warm with preferred sauce. (we just squeezed lemon on the tops instead of a sauce)


Friday we went to one of our favorite mexican restaurant's Lupe's and shared the chicken soft tacos which we just love! We enjoyed some ritas and time chatting about our day.



Saturday was spent working for part of the day for both of us. I only have to work a 1/2 Saturday once a month but for some reason when it comes around each time I just dread it...not sure I would have been real productive over those 4 hours I am in the office, but oh well! Then we had our friends Pamela & Craig over with their son Grady. They asked us to be his Godparents and we are SO excited and beyond honored!! We love this little guy so much! Pamela is one of my dearest friends and a fabulous chef! I aspire to be as good at whipping together tasty meals as her! We did a shrimp boil & drank lots of champs ( sorry had to throw in my RHOOC there) :) We had a fabulous time!

Here is a picture of our shrimp boil. It was quite tasty, the only thing that could have made it better was to be on the coast.


I told you all I might be brave enough to take pictures of my OOTD and I did just that on Saturday. I was so embarrassed and am so nervous to post these...I apparently am much more shy than I anticipated! Not a stunner of an outfit but something cool & fun to wear during the hot summer days here in South Texas! Please be kind with your comments, I am NO supermodel :)

Sunday was a wonderful day of relaxation! I attempted to clean out the guest room and office closets...not fun! Then we had hubby's brother and soon to be SIL over for some steak, marinated mushrooms and sweet corn! Such a great way to wrap up the weekend!
