Tasty Tuesday: Game day snacks & a HUGE giveaway

I have some great game day snacks for you to prepare for the next time you have a group together! These are all very easy and delicious! 

Mark's favorite dip - this is named after my Dad because he always asks that it be made! It is delicious and is an onion dip. 
 Ingredients:
1 cup mayo
1 cup sour cream
1 Tablespoon lemon juice
1/2 teaspoon salt
1/2 teaspoon paprika
1/2 teaspoon curry powder
2 Tablespoon minced onion
1 Tablespoon chopped chives
chopped green onions (for top)

Steps:
Mix all ingredients together (except green onions), mix well and then garnish with the green onions.

It is that easy!!

Next up is Black Bean and Corn Salad. This was so good! A little spice and great with tortilla chips!
Ingredients:
1 can (14 oz) black beans, rinsed and drained
1 can whole kernel corn
1 small red bell pepper, seeded and chopped
1/2 red onion, chopped
1 1/2 teaspoons ground cumin
2 teaspoons hot sauce (Tobasco is recommended)
1 lime juiced
2 Tablespoons olive oil
Salt and pepper

Steps:
Combine all ingredients in a bowl. Refrigerate before serving.

Mushroom Swiss Sliders with Spicy Fry Sauce 
from The Pioneer Woman
These were SO good!!! I absolutely love sliders but these were a little different which was nice!

Ingredients
1/2 cup mayo
2 Tablespoons ketchup
1 teaspoon cayenne pepper
8 ounces white button mushrooms, finely chopped
1/2 medium white onion, finely chopped
4 Tablespoons butter
1/2 cup white or red wine (optional)
8 dashes of Worcestershire sauce
Salt & pepper
2 1/2 pounds ground beef
1/4 cup heavy whipping cream
6 slices Swiss cheese, cut into 4 squares
12 dinner or slider rolls (cut and toasted)

Steps:
1. Add the mayo and ketchup to a small bowl and then add cayenne pepper. Stir well until combined.
2. Chop up the mushrooms and the 1/2 onion.
3. Melt 3 Tablespoons of butter in a skillet over medium-high heat. Add the onion and saute for a minute.
4. Next, add the mushrooms and stir to combine. Cook for another minute.
5. Now, the good part, add the wine and half the worcestershire and salt & pepper to taste. Cook until the mushrooms are soft and the wine has evaporated and reduced. Set this aside.
6. Add the ground beef to a separate bowl and pour in the heavy cream. I know this sounds strange but it actually makes the sliders even better!
7. Add 1 Tablespoon of salt, pepper to taste and the remaining worcestershire sauce, then stir or knead to combine it all. 
8. Divide the beef into 12 portions and form them into patties.
9. Make a small indention in the top of each patty. This is a great tip and keeps the sliders from puffing up when cooking.
10. Sizzle the remaining tablespoon of butter in the skillet over medium heat.
11. Cook the sliders 4 to 6 at a time for approximately 3 to 4 minutes per side (mine took about 5-6 minutes per side).
12. Use a scoop to add a big mound of the mushroom/onion mixture to each patty. 
13. Then lay 2 squares of Swiss cheese on top of each patty. Leave in the pan until the cheese melts.
14. To serve, spread the top and bottom buns with fry sauce and add the slider patty to the buns.

Like I said, this is a great slider recipe and you will love it!!
