Tasty Tuesday

Sunday night we usually grill steak and this week I decided to try another Pinterest recipe as a side. Mexican Street Corn! It looked delicious and all the ingredients are some of my favorites. It did not disappoint and was wonderful!! My picture wasn't near as pretty but it did taste great. Try it the next time you grill out and you will not be disappointed.

Roasted Corn with Queso, Cilantro and Chile 
(Mexican Street Corn)
4 large ears corn
butter
sea or kosher salt and freshly ground black pepper, to taste
1/2 cup mayonnaise
1 + 1/2 cups Queso Fresco, crumbled or Cotija or Parmesan cheese, grated
4 tablespoons fresh cilantro, minced
4 teaspoons chile powder
1 lime, cut into four wedges
-Preheat oven to 400 degrees F. 
-Brush corn lightly with butter and sprinkle with salt and pepper. (I didn't have the husks on mine so I wrapped the ears in foil to bake)
-Roast 20-25 minutes.
-Working with one ear of corn at time brush with mayonnaise, sprinkle with cheese, cilantro and chile     powder, pressing it onto the corn to help it stick. 
-Sprinkle with salt and pepper. (I put it back in the oven at this point to melt the cheese)
-Serve with lime wedges.

I love, LOVE corn fixed this way. I lived in Mexico for a while and loved to get it on the street corner in a cup. It was soooo good.
