Tasty Tuesday

Sunday night we had friends over and I made some more of the Pioneer Woman's wonderful recipes! I made the Peach-Whiskey Chicken and paired it with the Fancy Mac & Cheese (sans gorgonzola) and sateed spinach. It was great and I do have to admit the mac & cheese was pretty good without the gorgonzola...but we won't tell the husband :) I am SO mad at myself, I was chatting away having a good time and completely forgot to take pictures of the chicken so I'm using the PW's picture. Grrr! 


Peach-Whiskey Chicken
recipe from The Pioneer Woman Cooks: Food From My Frontier

I did happen to get some pictures of the fabulous ingredients though and I thought I would share. How could you not want this chicken when it uses these??

{some of my fabulous ingredients}

Ingredients:
2 T olive oil
2 T butter
12 chicken legs, skin-on
1 yellow onion, diced
1 1/2 c whiskey
4 c BBQ sauce
1 c peach preserves
2 T Worcestershire sauce
4 peaches, pitted & sliced into 8 slices each
3 green onions, thinly sliced
chopped fresh parsley

Steps:
  1. Preheat oven to 300.
  2. Heat olive oil & butter in skillet or pot over medium-high heat. Cook the chicken pieces until golden on all sides (about 5 minutes) then set aside.
  3. Add onion to the skillet & cook over medium heat for ~ 3 minutes or until translucent.
  4. Then pour in the whiskey & cook for 3 minutes, allowing the whiskey to cook & reduce.
  5. Add the BBQ sauce into the pan.
  6. Add the Peach Preserves, Worcestershire sauce & 1/2 cup of water, whisk to combine.
  7. Next add the chicken back to the pan and top with the peach slices.
  8. Cover the skittlet/pot with lid or aluminum foil and place in oven for 90 minutes.
  9. After it has cooked the chicken should be tender enough to fall off of the bone & the peaches are soft!
  10. Serve with your side & spoon sauce over the whole thing, sprinkle with green onions & parsley.

and I thought I would leave you on this Tuesday with a funny picture of me cooking. My Mom bought this apron for me a few years ago when I was not cooking much...I still like to wear it from time to time when it helps keep my dresses clean :)
