Peach-Whiskey Chicken
I did happen to get some pictures of the fabulous ingredients though and I thought I would share. How could you not want this chicken when it uses these??
- Preheat oven to 300.
- Heat olive oil & butter in skillet or pot over medium-high heat. Cook the chicken pieces until golden on all sides (about 5 minutes) then set aside.
- Add onion to the skillet & cook over medium heat for ~ 3 minutes or until translucent.
- Then pour in the whiskey & cook for 3 minutes, allowing the whiskey to cook & reduce.
- Add the BBQ sauce into the pan.
- Add the Peach Preserves, Worcestershire sauce & 1/2 cup of water, whisk to combine.
- Next add the chicken back to the pan and top with the peach slices.
- Cover the skittlet/pot with lid or aluminum foil and place in oven for 90 minutes.
- After it has cooked the chicken should be tender enough to fall off of the bone & the peaches are soft!
- Serve with your side & spoon sauce over the whole thing, sprinkle with green onions & parsley.
and I thought I would leave you on this Tuesday with a funny picture of me cooking. My Mom bought this apron for me a few years ago when I was not cooking much...I still like to wear it from time to time when it helps keep my dresses clean :)
