Tasty Tuesday: Pulled Pork & Twice-Baked Potatoes
The Pioneer Woman strikes again in our kitchen!! I have two amazingly delicious recipes for you today! I prepared this dish for some friends this past weekend and we all loved it (with the exception that the pulled was a little spicey - see my recommended change below).
Spicy Dr Pepper Pulled Pork
Ingredients
2 onions, peeled and quartered
1 whole pork butt (pork shoulder rust)
Salt & pepper to taste
1 - 11 oz can chipotle chiles in adobe sauce (I would recommend using a small can instead)
2 - 12-oz cans of Dr Pepper
4 Tablespoons packed brown sugar
Steps
1. Preheat your oven to 350 degrees.
2. Place onions in bottom of pot (I used a roasting pan).
3. Place the pork butt on top of the onions and add salt & pepper to taste.
4. Pour the chipotle chiles over the top of the roast.
5. Pour both cans of Dr Pepper over the chiles and then add the brown sugar to the liquid and stir to combine together.
6. Cover and cook for at least 6 hours (turning every 2 hours) - I cooked mine for 2 1/2 hours total, only 1 1/2 hours as the end instead of 3 rounds of 2 hours.
7. Remove meat and shred with forks, spoon out any fat on top of the liquid, then pour liquid back over the meat.
Twice-Baked New Potatoes
Ingredients
12 new potatoes, scrubbed clean
2 Tablespoons olive oil
4 oz cream cheese, softened (I used about 6 oz)
1/2 cup sour cream (I used about 3/4 cup)
1 1 /2 cups grated Monterey Jack cheese (I used about 2 cups)
1 tablespoon minced chives
1 garlic clove, finely minced (I used 1 T of refrigerated minced garlic in the jar)
Salt & black pepper to taste
Steps
1. Preheat oven to 375 degrees.
2. Coat the potatoes with olive oil (I used a basting brush and brushed it on).
3. Roast the potatoes for 20-25 minutes or until they are tender and skin is crisp.
4. Half the potatoes and make a small scoop to remove the insides (leave a rim of potato along the edge).
5. Add the cream cheese, sour cream, cheese, chives, garlic, salt & pepper to the scooped out potatoes.
6. Mash until the mixture is smooth (add salt & pepper if needed).
7. Scoop the mixture into each potato shell.
8. Bake for 20-25 minutes or until golden brown on top.
These were so delicious! I had leftovers yesterday and a sandwich out of the pulled pork. They were even better the second day!

We always love a good pulled pork recipe. I've used Root Beer before but can't wait to try Dr. P and chipotle, yum:) The potatoes look delicious too-so hungry now!
I've made that Dr. Pepper pork before and it was GOOD. Definitely adding those potatoes to my "to-make" list!

I am definitely making both these for game day! I never thought to add chipotle peppers to my pulled pork but it sounds so amazing!
oh my gosh that pulled pork recipe looks amazing, definitely will be trying it i love a quick and easy recipe and i love twice baked potatoes. i haven't had those in ages maybe i need to make them soon

Yummy! I love an easy pulled pork recipe and this one is a keeper! I never would have thought about Dr. Pepper as an ingredient but I love it. The potatoes look good too. Another home run my friend! I'm right there with ya on the blog reading. I'm so far behind. Hang in there! :)

I am SO trying this! I am loco crazy for dr pepper and I've had steak dr pepper steak tacos before but never pulled pork! Love it!!!
